Preheat oven to 170°C. Line a 20×20cm baking tin with baking paper.
Combine oats, nuts, seeds, coconut, and dried fruit (if using) in a large bowl.
Melt butter in a small saucepan over low heat. Add honey and brown sugar. Stir until the sugar dissolves — about 2 minutes. Don't let it boil.
Pour the butter mixture over the dry ingredients. Mix until every oat is coated.
Press the mixture firmly into the prepared tin. Use the back of a spoon or your hands — pack it down hard. This is what stops them crumbling.
Bake for 18–20 minutes until golden at the edges. The centre will still look slightly soft. That's fine.
Cool completely in the tin before cutting. This is the bit people skip. Don't skip it — they'll fall apart if you cut them warm.
Cut into 12 bars and store in an airtight container.
