Produced by bees working the River Red Gums along the dry creek beds of Central Australia. The trees flower when local rain says so, not when the calendar does, and the mix shifts a bit from site to site.
We don’t heat it, we don’t blend it, and we definitely don’t filter out the good stuff. What you get is exactly what the bees made, just in a jar.

Questions About This Jar
No. It goes straight from the hive into the jar - never heated, never filtered beyond removing bees and the big bits of wax. That's why it crystallises naturally over time, not because something's wrong with it.
Honey doesn't really go off. Keep the lid on tight and it out of direct sun, and it'll outlast most things in your pantry. It'll likely crystallise eventually - that's normal, just stand the jar in warm water to loosen it up again.
Return it within 14 days if it's unopened and in its original condition, and we'll sort you out.
Mostly River Red Gum, foraged by our bees within about 50km of Alice Springs. No Bloodwood in this one. That flowers at a different time and goes into the darker Finke River jar.
