Hold it up to the light and you'll see it straight away. This one's dark. Bold, malty, with a finish that sticks around after the toast is gone.
The bees work the River Red Gums along the Finke River. It's reckoned to be one of the oldest rivers on the planet, and it's dry most of the year. The gums don't much care. When they flower, the bees get busy.
Same deal as everything else we sell. Not heated, not blended with anything from somewhere else, and only strained enough to get the bees and the big bits of wax out.

Questions About This Jar
It's darker and it's got more grunt. The Desert jar is a Bloodwood and River Red Gum mix, easy-going enough for everyday toast. Finke River is mostly River Red Gum off the Finke, and it comes out bolder with a malty finish. Best way to settle it is the side-by-side pack.
No. It goes straight from the hive into the jar - never heated, never filtered beyond removing bees and the big bits of wax. That's why it crystallises naturally over time, not because something's wrong with it.
Honey doesn't really go off. Keep the lid on tight and it out of direct sun, and it'll outlast most things in your pantry. It'll likely crystallise eventually - that's normal, just stand the jar in warm water to loosen it up again.
Return it within 14 days if it's unopened and in its original condition, and we'll sort you out.
It runs south-east out of the West MacDonnell Ranges, not far from Alice Springs, and it's lined with River Red Gums most of the way. Bone dry most of the year, but those gums keep flowering.
